Roast Tomato Chutney

A  delish’ recipe from our mate, Gavin Sutherland, www.anotherfoodblogger.com

Preparation time 10 minutes
Cooking time 40 minutes

 

Method

Place all ingredients in a baking dish, stir and combine.
Place in over at 170c for 40min until soft and slightly charred.
Remove from oven, allow to cool.
Blend until smooth.
Store in an airtight container in the fridge for up to two weeks.

Ingredients

500g cherry tomatoes- cut in halves
1 red capsicum- cut into strips
1/2 red onion- slices
2 garlic cloves, crushed
3tbsp Squeaky Gate All Rounder EVOO
1tbsp honey
1tsp balsamic vinegar
1tsp chili flakes
salt & pepper

Tips/Tricks from Gavin Sutherland

Be sure to use good quality ingredients when making this sauce for maximum flavour. Don’t skimp on the tomatos or oil.
I find using a cast iron dish adds a little more caramelization.
Feel free to adjust the spice to your liking. 1 tsp of chili flakes adds a warm spice feeling without taking away from the tomatoes.
